Recipes Apple and Cod Bake - Serves 4

Healthy Fact:

A medium sized apple contains less than 50 calories.

Apple and Cod Bake - Serves 4

Ingredients:

1 Cape Granny Smith Apple - cored and sliced
1 tbsp olive oil 4 cod fillets (approx 125g each)
1 onion - sliced 16 cherry tomatoes
Lemon juice Bay leaves - chopped

Method:

# Pre-heat oven to 190°C / gas mark 5.
# Place the onion and apple slices (reserving 8 for garnish) into an ovenproof dish.
# Place the cod onto onions and apple.
# Add the tomatoes and top each piece of fish with a little lemon juice.
# Bake for 15-20 minutes.
# Sprinkle with bay leaves before serving.
# Serve with a green salad.
